Following the recipe is ideal to achieve the desired cake outcome, but what happens when it calls for ingredients you’ve forgotten or don’t have on hand? And to make matters worse, you’ve got 2 toddlers— one clinging to each leg—and your husband is working a 12 hour shift. The last thing you want is to load the kids in the car, negotiate in the garage just to get their seatbelts fastened, then drag them to the nearest Coles, only to face the same drama on the way back home.

I don’t know about you, but when I started out with limited experience, resources, equipment, and budget, I soon realised that you often have to work with what you’ve got. Substituting ingredients as you go becomes part of the baking process. My advice, however, is to keep the substitutions to a minimum, as changing too many key ingredients can alter the overall taste and appearance of the cake. Below are some substitutions I have found useful in my own baking journey. Hopefully, these tips can help other fellow newbies facing similar dilemmas.
